Round Top, Texas

One of our favorite places to go on day trips from Houston is Round Top. Known for its great antique shopping, it also boasts sweeping views of beautiful, quintessential Texas country landscapes. Of course, no trip to Round Top is complete without a meal at Royer’s Round Top Cafe.

“the royer experience” is something that touches you but something that you can’t touch…. it is about family, food, fun, friends, breakin’ bread together… and most of all memories!

Bud’s Chocolate Chip Pie

Our favorite recipe from Royer’s Round Top Cafe cookbook

Bud’s Chocolate Chip Pie
1 cup sugar
1 cup packed brown sugar
1 cup flour
2 large eggs, lightly beaten
1/2 cup melted unsalted butter
1/2 cup coarsely chopped pecans or walnuts
1/2 cup chocolate chips
1 (10-inch) pie shell
Mix sugars and flour together. Stir in eggs and then the butter, combining well. Fold in the nuts and chips. spread in the prepared crust and bake at 325 degress for 60 to 70 minutes or until a knife inserted in the center comes out clean.

Mrs. Dean’s Famous Fudge Brownies
2 sticks butter
6 TBS Hersey Cocoa
2 cups sugar
4 eggs
2 tsp. vaniilla
1/2 cup chopped pecans
2 cups flour
Melt the cocoa and margarine….remove from heat as soon as it all melts and is mixed together well. Pour over the sugar, add eggs and vanilla and stir with a fork until well mixed. Add pecans if desired and stir and then add the flour. Continue stirring with a fork until all flour is mixed into the other ingredients..
Pour into a greased 9 x 13 pan. Bake at 325 degrees for 20-25 minutes. Remove from oven, dust with powered sugar when the brownies have cooled.
This recipe came from a 1939 PTA cookbook. They are so yummy but if they are the least bit over cooked they are not very good. Watch carefully that last 5 minutes and check often using a toothpick.
(In the photo above, I poured a bag of Andes mint chips over the brownies immediately after removing from the oven, then I spread them with a spatula after a few minutes for chocolate mint brownies.)
